Zeaxanthin (Zeaxanthin, 3,3'-dihydroxy-β-carotene), also known as zeaxanthin, molecular formula C40H56O2, molecular weight 566.88,is an isoprene, an oxygenated carotenoid ( Xanthophyll), a lutein isomer with lutein. Most of the zeaxanthin found in nature is the All-e-iso-mer. Zeaxanthin is a new type of oil-soluble natural pigment widely found in green leafy vegetables, flowers,fruits, alfalfa and yellow corn. In nature, it often coexists with lutein, β-carotene, cryptoxanthin, etc. to form a mixture of carotenoids.
