Product Description | Black tea is a fully fermented tea, refined from fresh tea leaves through a series of processes such as withering, kneading (cutting), fermentation and drying. During the processing of black tea, a chemical reaction centred on the enzymatic oxidation of tea polyphenols takes place, resulting in significant changes to the composition of the fresh leaves. The polyphenols are reduced by more than 90% and new chemicals such as theaflavins and theaflavins are produced. Theaflavins (TFs) are a golden yellow pigment found in yellow and black teas, and are a product of tea fermentation. Theaflavins have a variety of potential functions related to human health, such as antioxidant, cardiovascular disease prevention, blood lipid lowering, anti-cancer and cancer prevention. |
