L-Carnosin, L Carnosin (Beta-Alanyl-L-Histidin) ist ein Dipeptid der Aminosäuren Beta-Alanin und Histidin. Es ist in Muskel- und Hirngewebe hoch konzentriert.
L-Carnosin, L Carnosin und Carnitin wurden von dem russischen Chemiker V.Gulevich entdeckt.Forscher in Großbritannien, Südkorea, Russland und anderen Ländern haben gezeigt, dass Carnosin eine Reihe von antioxidativen Eigenschaften hat, die von Vorteil sein können. Carnosin ist nachweislich zur Absrachung reaktiver Sauerstoffspezies (ROS) sowie von Alpha-Beta-unsättigten Aldehyden geeignet, die aus der Peroxidation von Zellmembranfettsäuren während oxidativem Stress entstehen. Carnosin ist auch ein Zwitterion, ein neutrales Molekül mit einem positiven und negativen Ende
