Food Additive Plant Extract Pure Natural Pineapple Extract Bromelain Enzyme Pineapple protease is a protein hydrolase extracted from pineapple juice or pineapple waste skin, referred to as pineapple enzyme. It is light yellow amorphous powder. It is slightly soluble in water, insoluble in ethanol, acetone, chloroform and ether. The optimum pH is 7. Slightly odorous. Enzyme activity can be activated by bovine cystine and inhibited by heavy metals. Pineapple enzyme preparation is enteric coated and appears grayish brown after removal of the enteric coating. Pineapple enzyme tablets are enteric coated tablets of pineapple enzyme and pig bile extract powder, which appear grayish brown after removing the enteric coating.
