Product Description

Potassium sorbate

Potassium sorbate, also known as potassium 2,4-hexadienate, is a potassium salt of sorbic acid with the molecular formula C6H7O2K. It is a white to light yellow flake like crystal, crystal particle or powder, odorless or slightly odorous, and is prone to moisture absorption, oxidation and decomposition, and discoloration after long-term exposure to air. Easily soluble in water, soluble in propylene glycol and ethanol. It is often used as a preservative and damages many enzyme systems by binding with thiol groups in microbial enzyme systems. Its toxicity is much lower than other preservatives and is widely used. Potassium sorbate can fully exert its anti-corrosion effect in acidic media, but its anti-corrosion effect is small under neutral conditions.

The Application of Potassium Sorbate in the Food Industry
Due to the mechanism of action, anti-corrosion, safety, stability, and the advantages of improving and enhancing the sensory properties of food, including color, aroma, taste, shape, and taste, potassium sorbate is a good food preservative widely used in Western developed countries and widely used in the food industry. In recent years, in China's food industry, potassium sorbate has also been widely used.
1. Application of Sorbic Acid and Potassium Salt in Beverages
Adding sorbic acid proportionally to alcoholic foods, soda beverages, fresh orange juice, hawthorn juice, and other non alcoholic beverages can extend the shelf life.
2. Application of Sorbic Acid and Potassium Salt in Soy Sauce, Sauce Products, and Pickled Vegetables
Adding an appropriate concentration of sorbic acid solution to soy sauce, soy sauce products, pickled vegetables, and kimchi can prevent them from developing mold and spoilage.
3. Application of Sorbic Acid and Potassium Salt in Aquatic Products
Sorbic acid can be added to fish cakes, fish sausages, smoked fish products, fish and shrimp cooked in soy sauce, fresh fish, shrimp, and other aquatic products, which can effectively prevent the occurrence of mold problems in products and prolong storage time.
4. Application of Sorbic Acid and Potassium Salt in Meat Products and Sausages
Dried meat, sausages, or similar dried meat products; Beef sausage, pork sausage, pig beef mixed sausage; General meat ingredients; meat stuffing; Cooked chicken; Fresh poultry meat; Fresh chicken legs, chicken breasts, and other products can be applied, which has a significant shelf life compared to unused foods and prolongs the preservation time. The preservation time is twice that of the control.
5. Application of Sorbic Acid and Potassium Salt in Vegetable and Fruit Preservation
(1) Vegetables and fruits: Adding sorbic acid preservative and storing at 30 ºC for more than a month can maintain the greenness of vegetables and fruits. (2) Apples: Preservative solution is sprayed on the surface of the apple and stored at room temperature for 4 months before it spoils. (3) Canned vegetables: can prevent rust on tinplate.
6. The application of sorbic acid and potassium salt in the preservation of pastries
Sorbic acid can be directly added to flour or dough. When using it, potassium sorbate should be dissolved in water or milk before being added to the flour or dough. When using sorbic acid and potassium salt in starch products, acidification of the material with a small amount of vinegar beforehand will have a better effect.
7. The application of sorbic acid and potassium salt in the preservation of candies and candies
For almond sugar, walnut sugar, peanut sugar, or general sandwich sugar, sorbic acid can be added at a dosage of 0.08% -0.15%. For some candies with high sugar content, the use of sorbic acid should be increased.
8. The application of sorbic acid and potassium salt in cheese preservation
Applied to hard cheese, cheese powder, salt salted cheese, fresh cheese, emulsified cheese, pre packaged cheese and other foods. There are three methods to use potassium sorbate. One is to add potassium sorbate to a salt solution, and then use this salt solution to make cheese; The second is to soak or spray potassium sorbate solution before selling the finished cheese. The third is to soak in a solution of sorbic acid containing a certain amount of alcohol.
9. Application of sorbic acid and potassium salt in the preservation of margarine
(1) Potassium sorbate can be added to the milky liquid margarine.
(2) Add sorbic acid and potassium sorbate to margarine mixed with emulsion and fat.
10. Application of sorbic acid and potassium salt in the preservation of mayonnaise and salad
It can prevent the generation of sour taste and bubbles, which are mostly caused by lactic acid fermentation.
11. Application of Sorbic Acid and Potassium Salt in Preservation of Other Products
Health product syrup: Adding sorbic acid in proportion can prevent the syrup from becoming moldy.
