Isomalt is sugar substitute and sugar alcohol made from beets. Isomalt is also called palatinitol. The sweetness of isomalt is about 50-60% that of sucrose.

Isomalt has many advantage, like, low hygroscopicity, high stability and tolerance, low calories, pure sweet taste, no undesired aftertaste, safe, etc. So it is widely used in sugar-free foods for diabetic. It is also widely used in confectionary, candies, chocolates, chewing gum, etc.
